SHRIMP SAUTÉED WITH TOMATOES, OLIVES & FETA CHEESE    Greek

1/3 cup olive oil

4 large cloves garlic, chopped

1 ½ TBSP dried oregano

2 # medium raw shrimp, peeled & deveined

½ cup quartered pitted Kalamata olives

bullet

½ 3 coarsely chopped, seeded, quality tomatoes

1/3 cup coarsely chopped fresh basil

1                    cup crumbled feta cheese, about 5 ounces

Fresh basil sprigs for garnish

 

Heat oil in large skillet or wok over high heat.  Add garlic and oregano; stir for 30 seconds.  Add shrimp and olives and sauté for 1 ½ - 2 minutes.  Add tomatoes and chopped basil and cook for another minute.  Salt and pepper to taste.  Transfer to a shallow platter and sprinkle with cheese.  Garnish with basil sprigs.
