PICKLED RED ONIONS                                                    Basic 

Makes about 2 cups 

bullet1 ½ cups white wine or cider vinegar
bullet1 ½ cups cold water
bullet1 TSP sugar
bullet½ TSP salt
bullet1 large red onion sliced into 1/8” rounds
bullet3 cups boiling water

 In medium stainless or glass container combine the vinegar, cold water, salt and sugar.   

Put the onion slices in a colander and pour the boiling water over them.  Rinse under cool water and drain.  Add to the vinegar brine and cover w/plastic wrap.  Refrigerate until chilled.   

Will keep in refrigerator for about 1 week.
