AHI PASTA                                       C.B. Original 

PER PERSON YOU WILL NEED:

 3 oz fresh ahi, cut in 1" cubes
2 plum tomatoes, pipped and diced
1 ˝ tbsp. finely chopped onions
˝ tbsp. chopped blanched garlic
1 tbsp. olive oil
˝ tbsp. chopped fresh basil
˝ tbsp. chopped fresh oregano
˝ tbsp. rinsed/drained capers
3 oz. pasta, uncooked...I prefer Angel Hair pasta

Sauté ahi in olive oil with onions over medium heat for 2 - 3 minutes until fish is just medium rare.  Add tomatoes, garlic, salt & fresh ground pepper to taste.  Add basil and oregano.  Stir and serve over cooked pasta.  Garnish with capers. 

If it seems a little dry when tomatoes are added, pour in some more olive oil
