BEEF AND BEER STEW                           Faucette family

 

6 tbs. butter
12 small onions or two 1 lb. cans
1 lb. or 1 18 oz can sliced mushrooms
3 lb. lean beef cubed
Pinch dried parsley
1 tsp. sugar
2 tbsp. prepared mustard
4 peppercorns
2 bay leaves
½ tsp. salt
1 can (16 oz) beer, or 1 ½ can(12oz)
1/4 c flour

Melt butter in deep ovenware. Sauté mushrooms and onions in butter (if fresh). Remove from pot and set aside.  Add meat to hot fat and brown.  Add flour, sugar, mustard, peppercorns, bay leaves, salt and beer. Add sautéed mushrooms and onions (or drained canned ones). When all is thoroughly mixed cover and put in a slow oven (275 degrees) cook 2 hours or longer until meat is tender.  Note: great done in crock pot set on low all day.
