Stolen recipe
Drain and flake crabmeat,
removing any shell. Stir together
biscuit mix and salt, garlic powder, cayenne, parsley and lemon rind.
Make a well in the center of the mixture.
Combine milk, egg, lemon juice, and Worcestershire sauce - add to dry
ingredients, stirring until just moistened.
Add crabmeat. Heat 2 inches of oil to at
least 375 degrees. Drop batter by
tsp. into hot oil. Fry a few at a
time for about 30 seconds or until golden brown, turning at least once.
Serve immediately with the creole sauce.
Make about 40 fritters. Creole Sauce:
Stir together all
ingredients, makes about 3/4 cup. |
