HUMMUS BI TAHINI (COLD CHICK PEA AND GARLIC PUREE)1 15 ½ oz. Canned garbanzo beans, drained
and rinsed. 1 tsp. salt 3 medium-sized cloves of
garlic, peeled and minced 1/4 cup fresh lemon juice ½ - 1 cup cold water 1 cup taratoor sauce TARATOOR sesame sauce In a small bowl, mash the
garlic to a paste with a pestle or the back of a large spoon.
Add the peas and ½ cup of water and mash vigorously to a smooth puree.
Or: (mash the garlic with the pestle or large spoon, then force the garlic,
water and peas through a fine sieve or a food mill set over a bowl.) With a large spoon, beat in
the lemon juice a few tablespoons at a time.
Beating constantly, pour in the taratoor in a slow thin stream and
continue to beat until the mixture is smooth.
Hummus should be thin enough to spread easily. If needed, mix in up to an additional ½ cup of cold water
one tablespoonful at a time. Makes about 2 ½ cups |
