MINT SAUCE                                                                                                            Basic

 
¼ - ½ cup chopped fresh mint
2 TBSP sugar
¼ cup boiling water
½ - ¾ cup cider vinegar

 

Put mint and sugar in a bowl and mash for a minute.  Add boiling water and let steep for about 5 minutes.  Add vinegar and taste to see if it needs more sugar or vinegar.  Add either if you wish.

Great with lamb!
