OVEN
ROASTED VEGETABLES

- per
person:
- 2
small red potatoes cut in 1/4 or 1/6
- olive
oil to moisten
- 1
clove garlic minced
- fresh
ground salt & pepper to taste
- Pinch
or dried herb such as oregano, rosemary, mint, etc.

- Toss
and cook in a preheated 400 degree oven

- add:
(again, per person)
- ½
zucchini, cubed about same size as potatoes
- ½
red or yellow bell pepper cubed as above
- ½
yellow or green bell pepper same as above
- ½
small onion, cubed as above
toss
these ingredients with a little olive oil, salt and pepper and some more of
the dried herb you are using
Add
this to the potatoes and cook for an additional 15 minutes, stirring every 5
minutes.
Note:
substitute other squashes, herbs to taste.
