SHRIMP IN SAKE GARLIC SAUCE                    Yamaguchi 

Serves 2 w/crusty bread or hot cooked rice

1 TSP minced garlic

1 TSP minced onion or shallot

1 TSP olive oil

bullet

1 # (25 per #) shrimp

bullet

6  oz. sake

bullet

3 TBSP unsalted or salted  butter

bullet

1 TBSP shoyu

bullet

1 TSP chopped flat leaf parsley

bullet

thicken w/ some mochiko and water if desired.

Over medium heat warm the olive oil in a sauté pan.  Add garlic and onion or shallot and cook until just browned.  Add shrimp and sake cook until shrimp just firm, 2 – 3 minutes.  Add butter, soy and parsley.  Stir until butter is melted. 

Serve in bowls.
