Tomato Feta RElish
Palomino
- 3 cups drained diced tomatoes (3 cans
drained)
- ¾ cup extra virgin olive oil
- 2 TBSP fresh minced garlic
- 2 TBSP fresh julienned basil
- ¼ cup chopped Kalamata olives
- 2 TBSP diced Maui (or other sweet) onion
- 1/3 cup feta cheese, crumbled
- ¼ cup red wine vinegar
Drain tomatoes well, chop a
little. Add all ingredients and
serve
Great as a bread dip!
