3 BEAN SALAD 1                                                   C.B. original

 

1          can red kidney beans (rinsed & drained) (the 14 oz. Can size)
1          can pink kidney beans (same treatment)
1          can white beans (same treatment), you may substitute garbanzos)
1          small red onion, thinly sliced
2          six oz. Containers of artichoke hearts cut into 1/4's
1          3 1/4 oz. Can pitted black olives, halved

Toss with dressing made by blending: (use blender!!)

2/3       cup olive oil
4          tbsp. red wine vinegar
½         Tsp. salt
fresh ground black pepper to taste
1          big clove garlic
8          fresh basil leaves (or substitute some dried crushed basil)
 

Better if it sits for about 24 hours.  If it has to stand, try to also let it stand for 24 hours.
