CHILE PEANUTS                                                    Mexican 

Makes 2 cups 

2 TBSP peanut or canola oil
2 cups shelled, skinned raw peanuts
10 cloves peeled garlic
2 – 3 TSP chile powder (piquín, árbol, or cayenne)
2 TSP salt
 

Heat oil in large skillet over medium heat.  Add peanuts and garlic and cook, stirring constantly, for 4 – 5 minutes.  Reduce heat to medium low, add chile powder and salt and cook, stirring constantly, for an additional 1 – 2 minutes.  Transfer to a tray to cool.  Remove garlic if desired.
