2          cups brown sugar
1          cup kosher salt
3          tbsp. mace
3          tbsp. allspice
3          tbsp. onion powder
3          tbsp. garlic powder
1 ½      tbsp powdered cloves

mix well, coat meat or fish, put in refer 24 hrs, rinse off w/water
