TRI TIP ROAST                        basic

This is an easy way to get a really rare or medium rare piece of meat.

A  1 1/2 - 2# whole Tri Tip (figure about 1/2# meat per person)

olive oil to coat, Kosher salt and fresh ground pepper to apply after roast is cooked.

 

Preheat oven to 250 degrees.  Place tri tip roast on a broiling pan so that air can circulate around the roast as it is cooking.  Lightly rub all parts of the meat with the olive oil.  Insert meat thermometer.

 

Place in oven.  Take out when temperature reaches 117 degrees for rare and a few degrees higher if you want the meat cooked a little more.  Let meat sit, loosely covered, for about 8 minutes.  Generously salt and pepper the meat and thinly slice it against the grain and serve.
