VINAIGRETTE                              Basic

 

1 shallot minced

2 TBSP high quality vinegar

½ TSP sea salt or kosher salt

1/3 – ½ cup extra-virgin olive oil

 

Mix salt, shallots and vinegar, let sit 30 minutes.  Just before serving, whisk in 1/3 – ½ cup extra-virgin olive oil.
