AVOCADO-GINGER SALSA                         David Reardon 

1 avocado, firm & ripe, gently mashed

1/4 cup diced tomato (seeded first)

2 TBSP. minced red onion

1 jalapeno pepper, seeded, and finely diced

1/4 cup cilantro, chopped

TSP. ground cumin

Salt and pepper to taste

 

Combine all ingredients, add salt and pepper to taste. 

 

Good with crab cakes, crawfish biegnet, etc.
