BAKED TURKEY TETRAZZINI                                                            K.F. Braden

 

8-10 SERVINGS     

1 lb. spaghetti, cooked
2, 3oz cans sliced mushrooms
4 c cooked turkey
1/4 c butter
1/4 c minced onions
1/4 c flour
3 c milk
2 chicken bouillon cubes
½ tsp. salt
½ tsp. pepper
1/8 tsp. nutmeg
1 tsp. allspice
½ lb. diced sharp cheese
2 tbs. sherry (or sweet white wine)

Arrange spaghetti (cooked and drained), turkey, and mushrooms in a baking dish. (Save  broth of mushrooms).  In an iron skillet melt butter, add minced onions and cook till soft on low heat.  Stir in flour and while mixing constantly with spoon or whisk add milk, broth from mushrooms, bullion cubes, salt, pepper, seasonings, cheese and sherry. Continue cooking until thick and cheese is melted. Pour over mix in baking dish. Bake in 375 degree oven until hot ( about 20 -30 minutes)
