BEEF STROGANOFF                C.B. Original


1 tbsp. powdered mustard
1 tbsp. sugar
2 tsp. salt
4 - 5 tbsp. peanut oil
4 cups thinly sliced onions (separated into rings)
1 # fresh mushrooms, thinly sliced lengthwise
2 # beef, good steak quality, lean, cut into 1/4" strips (filet steak is best)
1 tsp. fresh ground pepper
1 pint sour cream

Combine mustard, 1 ˝ tsp. of the sugar, pinch of salt enough hot water to make a paste.  Let sit 15 minutes.  Heat 2 tbsp. of the oil in a wok or big pan, put in mushrooms and onions, cover, reduce to low and cook 20 - 30 minutes.  Stir often.  Cook until veggies soft,  remove from pan and drain off all excess juices. 

Sauté the meat in small batches until slightly browned.  Combine with vegetables, add salt, pepper, mustard paste, remaining ˝ tsp. of sugar, sour cream a tbsp. at a time, reduce the pan to low and simmer for 2 or 3 min.  until heated through.


Serve with steamed rice - Hawaiian style, or serve with fried matchstick potatoes for the real Russian thing!
