BRUSCETTA                                               Italian basic

 3          vine ripened pipped red tomatoes, medium diced
4          medium cloves of garlic, minced or pressed
6          basil leaves, minced
1 - 3     oz. Really good extra virgin olive oil
fresh ground salt and pepper to taste
6 - 8     slices good, dense French or Italian bread, about ½ inch.

Combine all ingredients except bread and adjust seasoning.  It will seem a little “hot” due to the fresh garlic.  Grill bread on a grill or ribbed cast iron skillet (toast in a toaster if the first two aren’t available).  Top hot frilled bread with the tomato mix. 

Makesa 3 small servings or 2 medium servings.  Try to not add too much salt to the mixture as it causes the tomatoes to soften.  Add fresh ground salt to taste instead.
