CHICKEN RICE CASSEROLE                   Faucette family

 

3 c cooked rice
1 small can mushrooms
3/4 c chicken broth
1 4 oz can chopped pimentos
½ c chopped green peppers
1 ½ tbsp. flour
1 ½ c cooked chicken, cubed
½ c blanched slivered almonds (optional) 

Combine rice, pimentos, peppers.  Place 1/3 of mix in a greased casserole dish. Alternate layers of chicken, mushrooms, almonds, and remaining rice.  Blend flour, salt, and pepper with broth. Pour over mix in dish.  Bake at 350 degrees, covered, for 45 minutes.

note:  I have been served this recipe, in the late 60's and early 70's by my mother in law and my wife. It is an old family recipe that can be used as a base for your experimenting.  Have fun.  If nothing else, it is a recipe that will use up that can of mushrooms and can of pimentos you have been wondering how to use for the past couple of years!
