CHINESE CHICKEN SALAD                   C.B. stolen original

 

per person

 

1/4       head shredded iceberg lettuce
2          stalks celery, diagonally sliced thin
1/8       cup peanuts or almonds as desired
3 - 5     oz cooked and shredded chicken meat
1          tbsp. toasted sesame seeds
fried won ton pi wrapper strips

 dressing (again for 1)

1/8       cup vegetable oil
½         tsp. sesame oil
1          tbsp. sugar
1 ½      tbsp. Japanese rice wine vinegar (or white wine vinegar)
½         tsp. salt
1/8       tsp. pepper

Toss ingredients, top w/ dressing and won ton pi strips, 2 oz. Fried @ 350 degrees and lightly salted.

Alternate dressing for 2

2 TBSP Kraft fat-free 1000 Isle dressing
½ TSP sesame oil
1 TBSP vegetable oil
3/4 TSP rice wine vinegar
1 - 2 TBSP water
