CRAB FRITTERS                        Stolen recipe

 ½ pound fresh crabmeat (pick out any shell, etc.)
1 cup biscuit mix
3/4 tsp. salt
1/8 tsp. garlic powder
½ Tsp. cayenne (or a little less to taste)
1 tbsp. chopped fresh parsley (flat leaf or cilantro)
½ Tsp. grated lemon rind
1/4 cup milk
1 large egg
2 tbsp. fresh lemon juice
1/4 tsp. Worcestershire sauce
vegetable or peanut oil to fry in
creole sauce (recipe follows)

Drain and flake crabmeat, removing any shell.  Stir together biscuit mix and salt, garlic powder, cayenne, parsley and lemon rind.  Make a well in the center of the mixture.  Combine milk, egg, lemon juice, and Worcestershire sauce - add to dry ingredients, stirring until just moistened.  Add crabmeat.

Heat 2 inches of oil to at least 375 degrees.  Drop batter by tsp. into hot oil.  Fry a few at a time for about 30 seconds or until golden brown, turning at least once.  Serve immediately with the creole sauce.  Make about 40 fritters.

Creole Sauce:

½ cup Creole mustard (or very coarse ground mustard)
1/4 cup mayonnaise
1 tsp. fresh lemon juice
½ Tsp. hot sauce
1/4 tsp. fresh ground fresh pepper

Stir together all ingredients, makes about 3/4 cup.
