CURRY POWDER               Indian basic

Us this recipe instead of that tinned stuff.  Better yet, buy an Indian cokbook

2 TSP. Ground coriander ( 1 ½ TSP. Whole seeds)
2 TSP. Ground cumin (1 ½ TSP. Whole cumin seeds)
2 TSP. Pure red chile powder
2 TSP. Turmeric
2 TSP. Ground ginger

Optional additions: allspice, black pepper, cardamom, cinnamon, cloves, fennel seeds, fenugreek seeds, mace, brown or red mustard seeds, poppy seeds, saffron or sesame seeds.

Again, best when whole spices are roasted in a dry pan before grinding.  Store in an airtight container.  The Indian cookbook you bought will tell you how to use the curry powder.
