Optional additions: allspice, black pepper, cardamom, cinnamon, cloves, fennel seeds, fenugreek seeds, mace, brown or red mustard seeds, poppy seeds, saffron or sesame seeds. Again, best when whole spices are roasted in a dry pan before grinding. Store in an airtight container. The Indian cookbook you bought will tell you how to use the curry powder. |
