EDAMAME                                                    Basic

 

Cook them in boiling water for 6 minutes.  Do not run cold water over them after.  (If you buy frozen ones, don’t defrost them; put them directly in boiling water for 4 minutes.)  While they are hot, sprinkle them with a generous amount of kosher salt.
