HOMEMADE WHITE BREAD                                 K.F. Braden
(Amounts in ( ) for one loaf)
 
1 c. milk            (1/2)
1 ½ tbs. Sugar     (3/4)
2 tsp. Salt          (1)
2 tbs. Shortening    (1)
3/4 c. hot water     (6tbs.)
2 pkg. Dry yeast     (1)
1/4 c. lukewarm water(1/8)
@5 3/4 c. sifted flour (@3c.)

1.scald milk ‑ pour in large bowl, add sugar, shortening and hot water. Stir until shortening is melted, cool until lukewarm.

2. Add yeast (which has been dissolved in 1/4 c. lukewarm water), add flour, cup by cup, until dough clears the bowl.

3.knead 8‑10 minutes until dough feels smooth and looks satiny.

4.shape into ball, place in greased bowl, brush top with oil, cover with towel, and let rise in warm place until double in bulk.

5.knead dough down, turn onto floured board and shape into two loaves, place in loaf pans and let rise for 1 ½ hours or until double.

6.bake at 400 for 20 minutes and at 350 for 25 minutes. Cool away from drafts.
