1 15 oz. Canned garbanzo beans, drained and rinsed.

1 tsp. salt

3 medium-sized cloves of garlic, peeled and minced

1/4 cup fresh lemon juice

- 1 cup cold water

1 cup taratoor sauce  TARATOOR sesame sauce

In a small bowl, mash the garlic to a paste with a pestle or the back of a large spoon.  Add the peas and cup of water and mash vigorously to a smooth puree. Or: (mash the garlic with the pestle or large spoon, then force the garlic, water and peas through a fine sieve or a food mill set over a bowl.) 

With a large spoon, beat in the lemon juice a few tablespoons at a time.  Beating constantly, pour in the taratoor in a slow thin stream and continue to beat until the mixture is smooth.  Hummus should be thin enough to spread easily.  If needed, mix in up to an additional cup of cold water one tablespoonful at a time.

 Makes about 2 cups
