MANGO BREAD                             K.F. Braden

 

2 C. flour (or 1c. white flour, 1c. Whole wheat)
1 c. sugar
2 tsp. Soda
½ tsp. salt
2 tsp. cinnamon
3/4 c salad oil
3 eggs
½ c. raisins
1/4 c. chopped nuts
1 tsp. Vanilla
2 c. chopped mangoes

 

Sift dry ingredients and make a puka[1]. Add rest of the ingredients and mix well. Oil and line pan with waxed paper (or line with aluminum foil). Bake at 350 for an hour or until done.

(Better 2 4x8 pans for 50 minutes)

[1] Hawaiian word for hole!
