PATTY'S ITALIAN CREAM CAKE                     Chip’s first wife

(WITH CREAM CHEESE FROSTING)  

350 degrees 25 minutes

 

1 stick oleo
½ c shortening
2 c sugar
5 egg yolks
2 c flour, 1tsp soda, ½ tsp. salt
1 cup buttermilk (hint: use 1 c fresh milk mixed with 1 tbs. white  vinegar, let stand)
1 tsp. vanilla
1 sm. can coconut
1 c chopped pecans
5 egg whites, stiffly beaten

Cream oleo and shortening, add egg yolks and beat well. Sift  together, flour, salt, soda, add to mix alternately with buttermilk.  Add vanilla, coconut, nuts. Fold in egg whites. Bake in three  cake pans at 350 for 25 minutes. 

CREAM CHEESE FROSTING 
1 8-oz pkg. cream cheese, softened
½ stick oleo, 1 tsp. vanilla, pinch salt
1 box confectioners' sugar, 1 c chopped pecans 

Beat cream cheese and oleo until soft. Add vanilla and beat until  smooth. Spread between cooled layers, sprinkle chopped pecans on  top each layer, frost sides.
