RED BEANS AND RICE - QUICK
Aidells
- 2 TBSP olive oil
- 2 links Aidells Andouille sausage, chopped (chop all ingredients 1/4
inch)
- 1 TSP Cajun seasoning or thyme
- 1 small onion - chopped
- 2 stalks celery chopped
- 3 chopped green onions
- 1 clove garlic - chopped
- 1/2 bell pepper, any color, chopped
- 1 15 oz can red or kidney beans, drained & rinsed
- 1/2 cup tomato sauce
- 1/2 cup tomato sauce

- 4 cups cooked rice

- Extra Chopped green onions for garnish
Heat olive oil in large skillet and add sausage, onion, green onion, Cajun
seasoning, celery, garlic & bell pepper. Cook over medium heat fro 5
minutes, stirring often. Add beans, chicken stock and tomato sauce and
simmer for 10 minutes.
Serve over rice, top w/ chopped green onions, apply hot sauce as needed!
