RED CABBAGE SLAW                                                                        Basic


1 tablespoon Dijon mustard
Juice of 1 lemon
1/4 cup canola oil
2 cups shredded red cabbage         
1/4 cup sliced green scallions
Salt and black pepper to taste

Mix mustard with lemon juice. Whisk in oil and check for seasoning. Toss with cabbage and scallions. This slaw may be done 20 minutes before plating.
