SOBA NOODLES WITH CUCUMBERS                C.B. Original

 

1          # soba noodles
1/4       cup soy sauce
4          drops hot pepper oil
2          TBSP. white vinegar
1          tsp. finely minced fresh ginger
2          TBSP. sesame oil
2          large seedless cucumber, quartered and diced about ½ inch
2          TBSP. black sesame seeds

Cook the noodles in a large pot of boiling water until just tender, drain well.  Whisk together the soy sauce, hot pepper oil, vinegar and sesame oil and toss with the warm noodles.  Add the cucumber and top with the sesame seeds.  Serve at room temperature or chill and serve later.  If served later, you may wish to add a little salt.
