TEXAS ‘CAVIAR’                                                                                    “9/21/92"[1]

 1 clove garlic (minced)
˝ half cup chopped cilantro leaves
1 small yellow onion, finely diced
1 lg. Tomato, pipped (take the seeds out dummy!) And chopped
1 can drained and rinsed pinto beans
1 TBSP. red wine vinegar
2 TBSP. olive oil
1/8 TSP. Crushed red pepper flakes
˝ TSP. Kosher salt
Fresh ground pepper to taste

Mix all ingredients except beans and fresh ground pepper together.  Pour over beans and let sit for at least 5 minutes.

Makes two servings.
