TOMATILLO SALSA                

8 medium tomatillo, husked & coarsely chopped
1 tbsp. finely diced red onion
½ tbsp. minced jalapeno
2 tbsp. fresh lime juice
2 tbsp. coarsely chopped cilantro
1 tbsp. olive oil
1 tsp. honey
salt & fresh ground pepper

Combine ingredients, season w/ salt & pepper.  Chill up to one day.  Bring to room temp before serving.

 

Options:                                   great w/grilled pork, chicken, strong flavored fish.
